These are individual sized baked meringues that we topped with macerated strawberries. A local Texas stagecoach stop served them with homemade ice cream and then topped with strawberries. This recipe comes from my German great-grandmother. It was a real treat for all generations of kids (of all ages).
9 egg whites, beaten stiff
3 cups sugar
1 Tablespoon white vinegar
1 teaspoon vanilla
Preheat oven to 250. Separate eggs and save yolks for another recipe. Whip the egg whites with an electric mixer. Slowly add the sugar, vinegar and vanilla and beat until stiff peaks form. Place on cookie sheets and bake for an hour. They will dry but not brown. To ensure that they are fully dry, turn off the oven and leave the schaum tortes in the oven until the oven cools (about 30 minutes). Remove and use. You can also freeze them for later use.
